Chocolate coconut energy balls

  1. Pour the almonds into the food processor and pulse on high speed for 1 minute or into a fine meal in present.
  2. Add the nutmeg and cocoa to the bowl and pulse on low speed in order to thoroughly combine ingredients.
  3. With the food processor on high speed, start to slowly add a few dates at a time. If the mixture gathers towards the sides, take a spatula and push the contents downwards.
  4. Finally pour in the water one tablespoon at a time, this should be suffice, you want the mixture to be soft but not too wet (add an extra tablespoon of water if necessary).
  5. When the mixture is formed into a huge ball, at this stage you can begin to use your hands to roll the dough into small circles and roll into shredded coconut.

This recipe makes approximately 11-12 energy balls
Pre soak the nuts for easy digestion or dates of additional softness (if required)
