Creamy apple coconut oatmeal – Gluten free, vegan

  1. Preheat the oven to 350 degrees (gas mark 3).
  2. Place the shredded coconut on a baking tray lined with parchment paper and toast coconut in the oven for 3-4 minutes or until golden brown (shouldn’t take long to darken).
  3. Meanwhile, in a medium sized saucepan add the coconut milk and water and bring to the boil over medium heat.
  4. Once boiled, begin to stir in the cinnamon, apple sauce, vanilla and oats. The mixture will start to thicken up after a few minutes (around 4 minutes).
  5. Remove saucepan from stove and serve
  6. Garnish the bed of oatmeal with applesauce, toasted coconut, cinnamon and banana.
