Hello people, I hope you all are keeping well in this wonderful weather? Unfortunately I have been unwell over the past few days and slowly recuperating. It doesn’t help that the weather is warm and sunny albeit slightly breezy as of this afternoon.
I woke up on Sunday with flu like symptoms – arching, pains, extremely tired with a temperature. As the day progressed I began to develop a sore throat, so knew the dreaded summer cold was about to rear its ugly head.
The next day the aches and pains had dissipated however, my body was overcome with heat and my throat felt very uncomfortable, worst still I had to go to work, which I ended up doing (reluctantly) and my job requires me to be vocal and alert.
Needless to say I wasn’t the bubbly young woman I’m depicted to be and since Sunday I’ve transitioned from flu like symptoms to a terrible cold – coughing and sneezing my day though the week. Subsequently I am behind with blogging, well by my standards. I have an abundance of recipes and tips to share, things I will submit in the upcoming days.
On a lighter note I thought now would be the best time to showcase, what’s in my lunch box for tomorrow’s lunch. As you can see I’m an advocate of quinoa and green beans, they have been my “go to” option for side servings with poultry or beans/pulse. If you look closely you can see some sauteed mushrooms, red kidney beans and cod fish – all cooked in some fish seasoning.
It looks a large lunch, for a small woman I eat huge portions according to my dietary needs at the time. This should fill me up until home time and give me a good sizeable amount of protein in case I do have the strength to workout. In any case, it’s a wonderful hearty filling meal.
