Ingredients

  • 2-3 apples
  • cup dairy free butter melted (80ml)

For the breading

  • ¾ cup gluten free breadcrumbs (68g)
  • 4 tablespoon organic cane sugar coconut sugar works too (60g)
  • 1 tablespoon tapioca starch or use arrow root (15g)
  • ½ tablespoon cinnamon (8g)

Instructions

  • Preheat your air fryer.
  • Start by using a peeler to remove the apple peel and discard.
  • Slice the apples in half then into quarters (you will need a total of 10 wedges from each apple).
  • Use the knife to slice away the core and discard.
  • Set up a bowl of cold water with 1 teaspoon of pink salt and place the apples in the bowl (this will stop them from becoming discoloured).
  • Set up your dredging station in this order - melted butter, breading and the air fryer basket at the end.
  • Use your fingers to dunk the apple wedges in the melted butter, place the apple in the bowl with the breading and press down then use a spoon to pile the breadcrumbs onto on the apple wedge (almost as if you are burying it). Then use your forefinger and thumb to grasp the ends on the apple, shake off any excess breading and place in the basket. Repeat this step for the remaining pieces.
  • Set your air fryer to 190c/375f for 12-15 minutes (set the unit for 15 minutes but start to check around 12 minutes).
  • Once cooked allow to cool for 5 minutes before serving.

Notes

  • The best breadcrumbs to use for this recipe is Paxo gluten free breadcrumbs or Asda (Free from) breadcrumbs but you can use GF graham crackers if they are available in your country (they are not available in the UK).
  • The dipping sauce is optional and taken from my Grilled Pineapple Recipe.
  • Once the breadcrumbs have been applied, try not to keep touching the wedges i.e moving them around, just transfer them to the fryer basket.
  • Over touching the breading increase the chances of the coating coming off.
  • Make sure the dairy free butter is completely melted at all times and not semi solid (very important!!).
  • A small amount of sweetener is needed to compensate and yield a sweet coating.
  • Be sure to peel the apples prior to slicing the wedges as the coating will stick a lot better when this is done.
  • Peel both apples at the same time, to prevent them from being discoloured place the apple wedges in a bowl with 1 teaspoon of pink salt in water but make sure to rinse off the salt water before dredging.
