Ingredients

  • 1 cup Apple juice (236ml), fresh, not concentrated
  • 2 tablespoon Agar agar powder (30g), not flakes
  • 2 teaspoon Ginger (10g) fresh if possible (minced)
  • teaspoon Cinnamon (0.25g)
  • 3 tablespoon Sea moss gel (45g) see notes for the recipe
  • 1-2 tablespoon Agave nectar (15g-30g) or can use maple syrup, coconut nectar

Instructions

  • Pour the apple juice into a small saucepan together with the agar agar powder, ginger and cinnamon then proceed to whisk until everything is evenly combined.
  • Stir in the sea moss gel and agave nectar.
  • Switch on the stove on low-medium heat, start to whisk briskly and bring the mixture to a gentle simmer (DO NOT BOIL), you may notice a few lumps from the sea moss gel which will start to dissolve as you continue to whisk.
  • Continue to whisk until it starts to turn into a slightly thick-ish mixture, but not too thick as it will thicken as it cools down. (very important, in order for the gummies to set).
  • Have your gummy mould ready and use the dropper (or a very small teaspoon) to drop some of the mixture into the mould (work quickly as it sets fast).
  • Place the mould in the refrigerator for up to an hour until the gummies are firm to the touch.
  • Push the mould forward/upwards to release the gummies.
  • Keep the gummies in a jar, refrigerated and eat at your leisure!

Notes

  • DO NOT increase the heat and bring the gummy mixture to the boil at any time as this will destroy its nutritional content.
  • Store the gummies in an air tight mason jar.
  • The mixture is enough to fill 2 gummy moulds (as pictured).
  • For best results, use agar agar powder and NOT the flakes.
  • Stick to the measurements that have been specified, if you add too much of one ingredient (i.e too much juice or sweetener) then this tends to loosen up the mixture which compromises the thickness that is needed.
  • The gummies have a short shelf life, so far they have held up for 5 days (subject to change, will update accordingly).
  • Keep the gummies in the refrigerator at all times.
  • These are natural gummies without additives meaning that aren't heat resistant nor are they spongy like Haribos.
  • If the mixture starts to thicken up too much, simply return it to the stove to re-heat and melt (do this on the lowest heat).
