Jamaican Sexy Juice (pineapple punch )

Ingredients

  • 1 large fresh pineapple or use fresh pineapple juice (32oz/1litre)
  • cups of water (355ml)
  • ½ teaspoon of nutmeg (1g)
  • ½ teaspoon of vanilla extract (2g)
  • vegan condensed milk (to taste)
  • ½ cup plant based milk (optional) i.e coconut, almond milk etc...

Instructions

  • Cut the top and bottom of the pineapple and slice away the skin on the outside (remove the eye with a paring knife) to reveal the yellow flesh.
  • Cut the pineapple horizontally into slices and then chop into small chunks.
  • Pour the pineapple chunks and water into the blender and blitz until it's all broken down (this mixture will be frothy, this is normal).
  • Use a large strainer or cheesecloth to extract the juice (press down or squeeze firmly, depending on your chosen method)into a large bowl or a jug. At this point you can add more water (another cup) to extract more juice.
  • Add the nutmeg, vanilla and vegan condensed milk (and plant based milk, if you are using) to juice and sweeten to taste then stir..
  • Serve immediately

Juicer version

  • Slowly add the pineapple chunks, one after another into the chute (no water is necessary).
  • Once the juice is made, stir in the vanilla, nutmeg and vegan condensed milk and add plan based milk, if you're adding any.

Notes

  • The amount of sexy juice may vary, you might get more than 2 servings depending on how much water/plan based milk you used.
  • This is the recipe that you will need to make condensed coconut milk.
  • For best results, use fresh pineapple that is naturally sweet and ripe.
  • Use a spoon or a cheesecloth to extract all of the juice.
  • Don't throw away the pulp, use it in a smoothie
  • Any leftovers can be refrigerated for up to 5 days.
