Preheat the air fryer.
Place a liner inside the air fryer basket (if you have them) after the preheat has finished.
Mix together the sugar, pink salt, garlic powder and, starch, cumin, cayenne pepper in a small bowl and set aside (reserve some of the spice mix for after the peanuts are done).
Place the peanuts in a medium sized bowl.
Drizzle the peanuts with olive oil and toss to coat (do this by flipping the bowl).
Sprinkle the spicy seasoning over the nuts and toss (again flip the bowl with a small amount of hand use) so that the nuts are completely coated.
Place the nuts in the air fryer basket, spreading out evenly so they are not overcrowded (you may need to cook them in batches)
Air fry on 180c for 15 minutes (cooking time my vary) or until the peanuts are begin to darken.
After 10 minutes reduce the temperature to 160c for roughly 5 minutes
Once done, allow the peanuts to completely cool, sprinkle the seasoning and store in an air tight container.
