Ingredients

  • ½ cup gluten free chicory (118ml)brewed, strong (see notes)
  • 2 tablespoon maple syrup (40g)
  • 1 teaspoon almond extract (4g)
  • 2 cups almond milk (475ml)

For the froth

  • ¼ cup almond milk (63g)

Instructions

  • Divide the brewed chicory into two mugs.
  • Heat the almond milk on medium heat until it's hot (not boiling) and steaming.
  • Stir in the almond extract and maple syrup.
  • Immediately remove the saucepan from the stove and pour the milk into both mugs.
  • To make the froth, use a whisk/electrical frother or transfer the ¼ cup of milk into a blender until the milk is light and foamy.
  • Distribute the froth over both mugs of latte.
  • Serve immediately, while still hot.

Notes

  • Be sure to brew the chicory in advance, you want it to be quite strong for a better taste.
  • To brew the chicory, combine 2 tablespoons of chicory with ½ cups of hot water.
  • For best results, serve/drink the latte while it is still hot.
  • For a more prominent almond taste, add the almond extract.
  • Keep a watchful eye when you are heating the milk, you want it to be steaming but not boiling/scorched milk.
  • If you don't have an electric frother, use a blender, hand held whisk, immersion stick blender or a jar with a lid to create the froth.
  • Make sure your chicory is labelled gluten free as some contain wheat or barley.
