Papaya chia pudding recipe

- 1 ripe papaya peeled, halved with seeds discarded
- ¼ cup chia seeds
- 1 cup of coconut milk
In a small bowl combine both the coconut milk and chia seed - use a fork or a small whisk and beat gently to mix the coconut milk into the chia seeds.
Refrigerate and leave to thicken for about 30 minutes
Scoop out the papaya flesh and use a fork or potato masher to breakdown the papaya and set aside.
Layer the bottom of a jar or glass with half of the mashed papaya then pour the gelatinous chia seed mixture on top.
Finally add another layer over the top of the chia pudding and feel free to sprinkle on some chopped papaya as well.
serve accordingly.
