Powdered Coconut Sugar

Learn how to make powdered coconut sugar in a matter of minutes. This is the perfect alternative to refined powdered sugar using only 2 ingredients. Use it for glazing, buttercream, frosting and dusting sweet goods.

Ingredients

  • 1 cup coconut sugar (160g)
  • 1 tablespoon tapioca starch (8g)

Instructions

  • Combine the tapioca starch and coconut sugar into the appliance of your choice - vitamix dry container or coffee grinder works best.
  • Proceed to process the ingredients until a powdery sugar is formed.
  • Test the texture by rubbing the powdered sugar between 2 fingers to check for any grittiness, if so continue to process until an ultra fine powder is achieved.
  • Store in an air tight container/ glass jar with a lid.

Notes

  • This recipe makes a quantity of just over one cups worth of powdered sugar.
  • You can use any type of starch for this recipe i.e arrowroot or even cornstarch.
  • Feel free to substitute coconut sugar for raw cane sugar instead. I do this based on availability or depnding on what recipe I am making.
  • Be sure to double or even triple the recipe if needed.
  • You may notice that the colour of your frosting/buttercream or glaze will be a slightly tanned/light beige colour and not the traditional white porcelain white.
  • For best results, use a high speed blender or spice grinder to pulverise the coconut sugar.
  • Store any leftovers in an airtight container for up to several months.
  • Only make what you need at any given time.
