Peppermint Hot Chocolate (Vegan)
Learn how to make some peppermint infused hot chocolate. This hot beverage is rich, creamy and velvety smooth. You only need 4 ingredients - cacao powder, almond milk, maple syrup and fresh mint leaves. No chocolate chips or pieces are needed.

3 cups almond milk ¼ cup maple syrup 2 tablespoon cacao powder 20-25 mint leaves peppermint extract optional, as needed
Pour the almond milk into a medium sized saucepan on medium heat.
Add the maple syrup, cacao powder and the mint leaves.
Whisk to evenly combine everything together.
Bring the saucepan to the boil and then reduce the heat to medium-low.
Simmer for 15-20 minutes stirring occasionally.
Remove the saucepan from the stove.
Use a slotted spoon or a fine mesh sieve to remove/strain the mint leaves.
Add the desired amount of peppermint extract (if you are using) then stir.
Serve in heatproof glasses.
Feel free to add some vegan/dairy free chocolate chips if you want an even richer taste.
You can use another alternative plant based milk if you want to i.e Cashew Milk or even Coconut Milk .
If you are using peppermint extract, only use a very very small amount, too much will have a strong bitter after taste.
Make sure the mint leaves are de-stemmed and gently bruised (meaning the leaves are gently pressed to help release their natural aroma).
