There is nothing quite like cozying up to a hot cup of chocolate, paired with a book by the fireplace.
This isn't just any type of hot chocolate this one has a hint of peppermint flavour for a more festive twist to it.
Although, you can consume this drink any time of the year, just like gingerbread, there is something festive about peppermint.
Plus making your own hot chocolate from scratch is fun and not to mention incredibly easy.
What I like about my redition is not only is it vegan BUT.....unlike other vegan recipes, it doesn't include the use of chocolate chips.
The use of cacao powder is enough to get that real taste of chocolate paired with fresh mint leaves, maple syrup for a hint of sweetness and almond milk for a more plant based approach.
This is a simple yet tasty chocolate beverage with wholesome ingredients and without the heaviness.
Ingredients you will
- Cacao powder - Made from raw cacao beans, this is a vegan alternative to cocoa powder
- Mint leaves - When steeped they help to give the drink a natural peppermint taste.
- Almond milk - This is my go to plant based nut milk.
- Maple syrup - I like to use this a subtle hint of sweetness.
- Peppermint extract - This is optional, but it helps to enhance the taste of peppermint abit more.
The steps

- Pour the almond milk into a medium sized saucepan on medium heat.
- Add the maple syrup, cacao powder and the mint leaves.
- Whisk to evenly combine everything together.
- Bring the saucepan to the boil and then reduce the heat to medium-low.

- Simmer for 15-20 minutes stirring occasionally.
- Remove the saucepan from the stove.
- Use a slotted spoon or a fine mesh sieve to remove/strain the mint leaves.
- Add the desired amount of peppermint extract (if you are using) then stir.
- Serve in heatproof glasses.
Notes and tips
- Feel free to add some vegan/dairy free chocolate chips if you want an even richer taste.
- You can use another alternative plant based milk if you want to i.e Cashew Milk or even Coconut Milk.
- If you are using peppermint extract, only use a very very small amount, too much will have a strong bitter after taste.
- Make sure the mint leaves are de-stemmed and gently bruised (meaning the leaves are gently pressed to help release their natural aroma).

- peppermint extract optional, as needed
