In a large bowl, combine the almond milk with lemon juice and then leave to sit for 5 minutes.
Once the buttermilk is formed, add the hot sauce, egg, cajun seasoning, pink salt and then whisk to fully combine.
Add the turkey steaks to the egg mixture.
Combine the tapioca starch with the 2 tablespoons of cajun seasoning and pink salt in a ziplock bag and mix.
In another medium sized bowl or a large plate, mix togther the breadcrumbs, cajun seasoning (add the seasoning a tablespoon at a time, and taste taste as 5 tablespoons might be too spicy for you) and pink salt.
Do a final taste test of the breadcrumbs mixture and the starch mix and adjust more if needed.
Setup your breading station by putting the egg mixture bowl next to the ziplock bag with the starch followed by the bowl with the breadcrumbs.
Lightly spray the air fryer basket with cooking oil and set aside.
Use 2 fingers to carefully grip the edge of the turkey steak and allow any excess egg to drip into the bowl.
Place the turkey steak in bag with the tapioca starch, secure the bag and then shake so the turkey is completely coated and then carefully remove the turkey (with two fingers).
Dip the steak one more time in the egg mixture and allow the excess to drip off, one more time.
Sit the steak in the breading and use a spoon to coat the top the breading (the less manipulating of the turkey steak the more the coating will stick)
.Place the steak in the air fryer and repeat the above 4 steps.
Lightly spray the top so it isn't dry.
Air fry at 180C/356F for 12-14 minutes, turning over half way through the cooking time.
Once cooked, place the turkey steak on a cooling rack to rest for 5 minutes (this will help the bottom of the coating the stick).
