Learn how to make some juicy cajun style turkey steaks in your air fryer. Succulent cuts of boneless turkey breasts that are dipped and coated with my gluten/grain free homemade flourless breadcrumbs.
During the festive season for those of you who consume meat, the number one meat that is hyped up is turkey.
There's so such fuss and preparation that centres around a whole turkey. I would be a complete hypocrite if I didn't say that I wasn't involved in this turkey hype.
We often put the focus on whole turkey and ignore things like turkey leg or breast steaks.
I find that these cuts of meat are much more cost effective and also they are not so intimidating to prepare.
Add to the fact that turkey breasts are a better choice of meat because it is lean, meaning it has virtually no fat and is very high in protein which is great for health enthusiasts.
Furthermore, the method of cooking this recipe uses is air frying so no deep fat frying is needed
Thankfully there is no need to worry about excess grease or using copious amounts of oil.
The turkey steaks are first soaked in buttermilk made with almond milk and lemon juice and then dipped in tapioca starch and dredged in my homemade cajun seasoned breadcrumbs before being air fried until golden brown.
Ingredients you will need
- Turkey steaks - You want the turkey steaks to be the same size and shape if possible. I used approximately 4 steaks in total.
- Almond milk + lemon juice - Both almond milk and lemon are combined together to make dairy free buttermilk which is required for soaking the steaks.
- Eggs - Just one large egg is needed to make the egg wash.
- Hot sauce - This is optional but hot sauce gives the egg wash a spicy kick.
- Cajun seasoning - I am using my homemade cajun style seasoning.
- Breadcrumbs - I am using my very own homemade gluten free breadcrumbs.
- Tapioca starch - This helps the breadcrumbs to adhere.
- Pink salt - Used to enhance the flavour/taste.
- Cooking spray (not pictured) - For spraying the inside of the basket and turky steak.
The steps
- In a large bowl, combine the almond milk with lemon juice and then leave to sit for 5 minutes.
- Once the buttermilk is formed, add the hot sauce, egg, cajun seasoning, pink salt and then whisk to fully combine.
- Add the turkey steaks to the egg mixture.
- Combine the tapioca starch with the 2 tablespoons of cajun seasoning and pink salt in a ziplock bag and mix.
- In another medium sized bowl or a large plate, mix togther the breadcrumbs, cajun seasoning (add the seasoning a tablespoon at a time, and taste taste as 5 tablespoons might be too spicy for you) and pink salt.
- Do a final taste test of the breadcrumbs mixture and the starch mix and adjust more if needed.
- Setup your breading station by putting the egg mixture bowl next to the ziplock bag with the starch followed by the bowl with the breadcrumbs.
- Lightly spray the air fryer basket with cooking oil and set aside.
- Use 2 fingers to carefully grip the edge of the turkey steak and allow any excess egg to drip into the bowl.
- Place the turkey steak in bag with the tapioca starch, secure the bag and then shake so the turkey is completely coated and then carefully remove the turkey (with two fingers).
- Dip the steak one more time in the egg mixture and allow the excess to drip off, one more time.
- Sit the steak in the breading and use a spoon to coat the top the breading (the less manipulating of the turkey steak the more the coating will stick).
- Place the steak in the air fryer and repeat the above 4 steps.
- Lightly spray the top so it isn't dry.
- Air fry at 180C/356F for 12-14 minutes, turning over half way through the cooking time.
- Once cooked, place the turkey steak on a cooling rack to rest for 5 minutes (this will help the bottom of the coating the stick).
Notes and tips
- I am using my home Gluten Free Breadcrumbs to make this recipe but you can use storebought or your preferred gluten free breadcrumbs if you want to.
- This is the recipe for my homemade Cajun Seasoning.
- Use the air frying time as a general guide as the most important thing is the internal cooking time which is 75C/165F (the juices should run clear once the turkey steaks are cooked).
- Don't skip resting the turkey steaks once they have been air fried resting them on the cooling rack is important to create air underneath and to prevent the coating from pulling away when plated up.
- If you need to re-heat the turkey steaks, lightly spray them with oil and re-heat for a few minutes on the lowest setting.
- Make sure to do a TASTE TEST of the starch mix and especially the breadcrumbs after you have added your seasoning as you may want to add more cajun spice or pink salt.
- If you don't want to air fry the turkey steak, leave them to marinate for up to 24 hours in the egg mixture, just wrap the bowl and keep it refrigerated.
- You can use arrowroot flour or brown rice flour, those are both great alternatives to tapioca starch.

Cajun Turkey Steaks
Ingredients

For the egg marinade
- 1 cup almond milk (236ml)
