Unless you have been living somewhere in a hole, plantain(s) have been trending in the food industry for a few years now.
Of course, being Caribbean, plantain(s) are not a new food trend for me as I grew up eating them from a very young age.
However, I know this isn't the case for many people from different parts of the world that are just becoming familiar with it.
Plantain(s) are widely popular in Africa, Latin America and the Caribbean. They are like the cooking banana for these regions.
While it grows abundantly on the trees like most fruit, it is normally cooked and not eaten raw. Instead being treated like a vegetable, make no mistake, plantain is a fruit.
You can eat it in it's unripened (green) stage where it is more starchy or alternatively if you have a sweet tooth, when the skin is yellow with plenty of black spots.
Whatever the case, I'm going to show you guys 15 recipes that are all made with plantain(s).
A combination of vegan and non vegan, something to suit everyones dietary requirements.
Move over hamburger and say hello to this burger made with sweet ripe plantains. Pair it with Mango Pineapple Sauce or Scotch Bonnet Pepper Sauce.
Tired of mashed potatoes? Yeh, me too! How about making some delicious mash from some yellow plantain(s). The darker the exterior skin of the plantain(s) the sweeter the mash.
Frittata might be Italian, but this Plantain Frittata is where its at. This is a Caribbean spin on a Italian classical breakfast dish.
These aren't your ordinary Lay's or Walkers chips (crisps), these chips are made from ripe plantain(s). No deep fat frying or use of excessive amounts of oil, they are oven baked to perfection.
Not your ordinary lasagna, this Latin inspired dish, doesn't use lasagna sheets that are made from wheat (gluten). Instead the beloved sweet plantain is sandwiched between ground beef and dairy free cheese.
Why fry pieces of plantain when you can opt for something much more healthier, like oven baking them instead? Need I say anything else!
Vegan Caribbean Plantain Curry
Still my most popular curry to date, so good that even meat eaters are hooked on it. There's combination of legumes and vegetables in here making it nutritious and extremely filling.
Spicy Sweet Shrimp and Plantain(s)
A combination of yellow plantain(s) with shrimp cooked in a sweet sauce.
In the gluten free flour world, you can use almost any nut, seed or even fruit as in the case of this green plantain to make grain free flour.
Would you be willing to trade in your oatmeal for some vegan friendly yellow plantain porridge? It's so delicious, wholesome and incredibly filling.
Bored of eating baked/jacket potatoes? Well how about this Caribbean spin where the plantain is oven baked and then stuffed with black beans (vegan style).
Another recipe with a Caribbean spin, based on the British dish Shepherd's pie. Instead of using mashed potatoes, plantain is used for the topping.
