Garlic Butter Chicken

Learn how to make this quick and incredibly easy garlic butter chicken recipe. It's so tasty and makes the perfect week night meal for the entire family.

In my household garlic is one of our favourite ingredients for many of our recipes. We love it so much that I decided to dedicate an entire recipe to garlic to be the star of the show.

Of course, it's not the only ingredient, but it's highlighted quite nicely in this recipe.

Garlic and butter, dairy free to be precise, pair so well together for this chicken dinner.

What's great about this recipe is that it doesn't take up too much of your time and yet the taste and flavour isn't compromised either.

This is one of my go to meals during the week day when I want something that is filling, delicious and not overly complicated.

I know some of, actually scratch that A LOT of my recipes have a laundry list of ingredients but this one is very minimal.

Ingredients you need

  • Chicken - I like to use chicken thigh that is boneless and skinless because it is juicer than chicken breast.
  • Chicken stock - This helps to give the sauce more flavour, just be sure that you are using low sodium and gluten free.
  • All purpose seasoning - My multi purpose go to seasoning for most recipes.
  • Garlic - I like to use minced garlic.
  • Olive oil - To pan sear the chicken.
  • Orange juice - this helps to balance out the flavour of the sauce.
  • Butter - Dairy free but (Vitalite) is my preferred choice to make the sauce.
  • Parsley and thyme - I use a combination of fresh thyme, stems removed and dried parsley either works just fine.
  • Garlic and onion granules, black pepper and pink salt - seasoning for the chicken.

Recipe preparation

The actual recipe is split into two parts seasoning the chicken of your choice, I like to use skinless and boneless chicken thighs because they are so juicy.

Chicken breast works just fine, if you want meat that is naturally lean and if you don't want to trim off any excess fat from the chicken thigh meat.

The garlic granules, onion powder, all purpose seasoning, thyme, parsley, black pepper and pink salt are then used to season the chicken.

The chicken is then pan seared for a few minutes and then removed from the frying pan so that the garlic butter sauce can be made.

The sauce and chicken are merged together so the chicken can take on the garlicky butter flavour before being served.

The stepsStep 1-4 seasoning the chicken

  • Add the chicken thighs to a medium sized bowl.
  • Season the chicken with the garlic granules, onion powder, all purpose seasoning, thyme, parsley, black pepper and pink salt.
  • Add the olive oil to a medium sized frying pan on medium heat.
  • Add the chicken and proceed to pan sear (brown) it, this should take several minutes.
Step 5-8 removing the chicken
  • Once seared, remove the chicken from the frying pan and set aside.
  • In the same frying pan, add the dairy free butter and garlic.
  • Proceed to saute the garlic until soft and translucent.
  • Add the chicken broth, garlic and orange juice.
  • Stir so all of the ingredients are combined and the thickens up (this will take several minutes to achieve.
Step 9-12 making the garlic butter sauce
  • Add the pieces of chicken to the sauce.
  • Reduce the heat to low and simmer for 5-10 minutes, basting the chicken with the sauce occasionally.
  • Do a taste test and add pink salt, if needed then serve accordingly.

Notes and tips

  • I'm using dairy free butter for this recipe and the brand that I'm using is called Vitalite.
  • Feel free to use lemon or lime for that citrus taste, you don't have to use orange.
  • You can use chicken breast instead of boneless and skinless chicken thighs to make this recipe.
  • You can keep the chicken whole or as large chunky pieces but I like to go for smaller bites because the seasoning adheres to the meat a lot better.

  • When adding the ingredients for the sauce, it is important to stir them, don't let the garlic burn as garlic has a tendency to be bitter then burnt.
  • Make sure you are using chicken stock that is low in sodium and gluten free.
  • Always do a taste test towards the end of cooking so you can adjust the taste to suit.

Ingredients

  • 1 lb boneless and skinless chicken thighs (455g)
  • 2 teaspoon garlic granules (or can use garlic powder)
  • 2 teaspoon onion powder
  • 1 teaspoon parsley
  • 1 teaspoon fresh thyme stems removed
  • 2 teaspoon all purpose seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon pink salt
  • 2 tablespoon olive oil

To make the garlic butter sauce

  • 4 tablespoon dairy free butter
  • 6 garlic cloves minced
  • ½ cup chicken broth (118ml)
  • 3 tablespoon orange juice
  • pink salt to taste

    What do you recommend for a side dish? I have frozen brown rice or gf noodles and salad.

      Hi April, I would recommed brown rice, that's what I tend to eat it with along with some steamed vegetables.
