Leftover Turkey Fried Rice

Turkey fried rice is super delicious, so quick and easy. This dish is the perfect way to pull together any leftover turkey, tossed with some brown rice and veggies.

If you are looking for a turkey dish that is filling and comes together in no time then this is the recipe that you need in your life right now.

It's perfectly fuss free and tasty. Just like my Lamb Fried Rice dish, that you should definitely give a try.

Let me guess thanksgiving is officially over, you and your loved ones ate an abundance of food and of course it wouldn't be thanksgiving without some turkey? correct?

Yup! I know you so well, you're probably reading this thinking I'm psychic, nah it's just an obvious guess.

Okay, once the celebration time is over, the question is what do you do with all these leftovers? There's a lot right?

While I don;t have a magic wand for all those leftovers I decided to go for the most obvious one which is turkey...(duh).

I have the perfect solution for you and it's called turkey fried rice, yes my friends put that turkey to good use by making a stir fry.

You can even save this leftover turkey fried rice for when Christmas is over and you will probably have some leftovers from that too.

Whatever the case, Charla has you covered for both occasions.

Reasons to make this dish

  • It's super simple and very easy
  • Most of the ingredients are probably in your pantry
  • It's the perfect way to use up leftover turkey
  • Takes less then 30 minutes to make
  • It's seasonal!!

The steps

  • On medium heat, add some olive oil to your skillet/wok.
  • Add your onion, garlic and ginger then proceed to saute until translucent/soft.
  • Add your turkey then sprinkle in your seasoning (all purpose, parsley and thyme) and stir
  • Next add your vegetables - garden peas, mixed peppers etc... continuing to stir and combine with the other ingredients.
  • Fold in the rice and cranberries if including then add your soy(a) sauce.
  • Add salt and black pepper to taste/ adjust seasoning further if required.

Can you make this stir fried rice with fresh cuts of turkey?

Yes, despite the title of the post, if you want to use turkey that's fresh/uncooked. I would suggest slicing it into small pieces and cooking it when sauteing the base ingredients (onion, garlic etc..).

Go for it! In fact I encourage those people who are extremely busy and looking for easy dinner to make this recipe.

Notes and tips

  • If you don't want to use Brown Rice, feel free to use Cauliflower Rice, wild rice or quinoa. These choices are highly nutritious.
  • Use whatever leftover vegetables you want - my veggies are just a rough guide. This is a freestyle type of recipe so you can pretty much tailor it to your needs
  • Use organic soy(a) or coconut aminos for a soy alternative.
  • Make sure the rice is cooked and completely cold in advance, preferably refrigerated
  • If it's your first time making rice and need help troubleshooting, don't forget to check out my How to Fix Recipe post.
  • Cranberries are optional, if you don't care for fruit in your rice just leave it out.
  • I'm using All Purpose Seasoning but use chicken seasoning or any other type of seasoning that you have to hand, remember we are improvising.
  • Feel free to freeze any leftovers.

Ingredients

  • 3 tablespoon olive oil (40g)
  • 3 garlic cloves minced
  • 1 large onion sliced
  • ½ tablespoon fresh ginger minced
  • 1 tablespoon all purpose seasoning (3.5g)
  • ½ tablespoon parsley (7.5g)
  • 2 teaspoon thyme (4g) dried or fresh (stems removed)
  • 1½ lb turkey (700g) small pieces/shredded
  • ½ cup garden peas (73g)
  • 1 cup mixed bell peppers (150g)
  • 4 cups cold brown rice (760g)
  • ⅓ cup dried cranberries (40g) optional
  • 3 tablespoon coconut aminos or organic soy(a) (40g)
  • black pepper and pink salt to taste

Instructions

    Now I am wishing I had some leftover turkey from Thanksgiving! I am going to have to make a small turkey breast just to make this fried rice dish. Off to the store I go!
