Starfruit Juice

Learn how to make some delicious starfruit juice with adding freshly ripened starfruit, ginger, lime juice and sweetened to taste.

I have so many juice recipes on my website and I finally get to add starfruit to the roster because my local supermarket had them in abundance.

I immediately purchased a large quantity of them because I know I wanted to make some juice with them.

What is starfruit?

Starfruit is a tropical fruit that is shaped like a five point star hence how the name came about.

It is known by other names such as Caramboa while most Caribbean islands know it as "five finger".

The starfruit is native to south east Asian but the tree is cultivated in many tropical parts of the world including some parts of the United States, Polynesia, Micronesia, parts of Latin America and the Caribbean.

The entire fruit is edible and can be eaten in its raw form, although it can be cooked. 

You can make some many things with this fruit including relishes, chutney, jam, sauce and juice.

Taste and texture

The skin of a starfruit is waxy, albeit very much edible and there colour ranges from yellow to light green.

There are a few variations of the starfruit so the taste varies.

Unripe starfruit has more of a green hue to them, they are more firm with a much more rough texture, tangy with sour undertones and taste similar to tart green apples.

 When starfruit is ripe and overripe the flesh is soft and juicy with the skin being more of a high yellow tone with a tint of green and sometimes it has brown spots along the edges.

The taste is a combination of apple, pear and grapes with a hint of citrus.

As you can see, you can do so many things with starfruit do with starfruit.

This post will showcase how to make some juice using a combination of tangy starfruit, zesty lime and the warmth of ginger and the option of a sweetener.

Ingredients you will need

  • Starfruit - Make sure you are using YELLOW star fruit, you want to use starfruit that is completely ripe.
  • Lime - Gives an element of a citrusy edge
  • Ginger - For subtle warmth and an really helps to elevate the juice
  • Sweetener of your choice - I use coconut nectar but you can use any type of sweetener to taste

The steps

  • Place the starfruit in a colander and rinse them under water.
  • Place the starfruit on a chopping board and use a paring knife to slice off the waxy edges.
  • Repeat the above steps with the rest of the starfruit and set aside.
  • Place the starfruit, lime juice, ginger and the water into a blender.

  • Blitz until the pulp is smooth (you may need to add more water).
  • Strain off the juice in a fine mesh sieve or a cheesecloth over a jug or pitcher (use the back of a spoon to extract as much juice as possible, if you are using the sieve method)
  • Sweeten with a sweetener of your choice to taste.

Notes and tips

  • Don't use green/unripened starfruit to make this juice as it will be sour. Starfruit that is bright yellow with brown edges is the sweet spot.
  • Make sure to remove the waxy edges before blending as they can make the juice bitter.
  • If you prefer a thinner juice make sure to add more water when blending, for a thicker juice just use less water (use the amount of water stated as a guideline).
  • Feel free to add more fruit i.e orange, mango, passion fruit, pineapple etc...
  • Keep the juice refrigerated and consume within 5 days, just stir it prior to serving.
  • Use a cheesecloth or fine mesh sieve to strain off the juice, make sure to press down using the back of a spoon.

  • 8-10 starfruit
  • 1 inch fresh ginger peeled
  • ¼ cup juice of a fresh lime
  • 6-8 cups water (you may need more or less depending on if you want thin or thick textured juice)
  • sweetener of your choice

  • Place the starfruit in a colander and rinse them under water.
  • Place the starfruit on a chopping board and use a paring knife to slice off the waxy edges.
