How to Make Passion Fruit Juice

Learn how to make fresh passion fruit juice using only 3 ingredints - passion fruit, filtered water and an optional sweetener of your choice. A Caribbean inspired beverage that is sweet, tangy and bursting with tropical flavour.

Growing up passion fruit was always around, whether it was on a vine in someones backyard or at the marketplace, it was there.

There is something special about opening a passion fruit and exposing those tiny little seeds with that fragrant aroma.

What is passion fruit?

Passion fruit is a small tropical berry that grows on a climbing vine. It has a tough outer rind and a tangy edible seed filled interior.

This fruit is common in tropical climates South America, the Caribbean, Asia, Oceania and Africa and is known by various names including Maracuya, Parcha, Grenadilla, Lilikoi just to name afew.

The are various types of passion fruit with the purple and yellow being the most common type.

The purple variation is usually the most common type of passion fruit you will find especially in the diaspora.

It is smaller than its yellow counterpart, mildly acidic but much sweeter in flavour.

The outer skin is smooth although it does start to wrinkle when at its peak of ripeness making it more ideal for eating fresh or for juice making.

Yellow passion fruit is much larger in size, more tart, sharper, highly acidic and when fully ripe the rind is still smooth. 

Passion fruit pulp is used to make beverages, eaten fresh, added to salads, yoghurt, jam, desserts, bakery and even marinades.

Ingredients you will need

Ingredients you will need for passion fruit juice

  • Passion fruit - If possible try to get fresh ripe passion fruit. If it is the purple variation the outer skin should be slightly wrinkled and feel heavy as this is a good indication of the fruit being ripe and juicy.
  • Water - Preferably filtered water.
  • Sweetener - This is optional, depending on the ripeness of the fruit and your preference.

The steps

  • Place the passion fruit on a chopping board and use a paring knife to slice it in half.
  • Place the halves carefully on top of each other in a large bowl.
  • Use a spoon to scoop out the passion fruit pulp into a small bowl.
  • Pour the filtered water into the blender then add the passion fruit pulp.
  • Pulse the mixture a few times to breakdown the seeds (you don't want to break them down completely).

  • Use a fine mesh sieve to strain off the juice into a jug or pitcher (press down on the seeds with the back of a spoon). Discard the seeds.
  • Skim off any of the foam with a spoon and discard.
  • Stir in the sweetener of your choice to taste.
  • Serve with ice.

Note and tips

  • Try to pick passion fruit with wrinkled skin (if using the purple ones) as they are more likely to be sweeter and juicer.
  • Don't over blend the seeds, pulsing is fine as we want to loosen up the pulp from the seeds.
  • It is normal for the juice to separate, just give it a stir before serving.
  • Feel free to add ginger, lemon, lime, mango, pineapple or even orange juice.
  • Sweeten according to your preference. I used coconut nectar which is low GI and not overly sweet in taste.
  • Keep any leftover juice refrigerated for up to 3 days.
  • Best served when refrigerated and chilled.
