This tomato soup is a 2 in 1 recipe which is saves on time. All you need to do is add all of the ingredients to your Vitamix and it's pureed into a velvety smooth warm soup. Low carb, tasty, simple and ready in under 10 minutes.
Let's face it most soup recipes that are homemade and made from scratch tend to be time consuming which can be off putting for many of us.
I love cooking but I'm human in the sense that there are times where I just want to be in and out of the kitchen in a matter of minutes.
Take this Vitamix tomato soup for example, this recipe is an adapted short cut of my Roasted Red Pepper Tomato Soup.
Although, it's not the exact same recipe that's where I drew my inspiration from.
If you have already made the aforementioned soup then you will enjoy this one and appreciate just how quick it is to prepare.
It take less than 10 minutes, you don't even need to do any prep work unless you want to chop/peel the carrot and celery. Even that won't take more than 2-3 minutes.
The Vitamix
You're probably wondering, why use the Vitamix to make this recipe? Good question. Well first of all this isn't a sales pitch or anything of that nature.
I want to make things easier for you, if you have a Vitamix (Blendtec works too). Both of these power blender have the capability of heating up soup due to the friction of the blades.
That's pretty genius, don't you think? No need to transfer the pureed soup to the a saucepan and heat it on the stove, it's all done in one unit.
Reason to make this recipe
Here are some of the reasons as to why you would give this soup dish a try.
- Tomatoes are enriched with vitamin A, E and K which help to optimise great skin, eye health and blood clotting.
- High in the antioxidants known as beta carotene which gives it that orange hue.
- Great for promoting/assisting weight loss goals
- Low in fat and Carbohydrates
- Good for promoting bowel movements
- Great for men's health
The Steps
- Place all of the ingredients in the Vitamix container and secure the lid.
- Start the blender on the lowest speed and gradually move up to the high speed.
- Blend the soup for several minutes (the container will start to feel warm and steam will appear from the lid, that's when it's ready.
- Make sure to serve this soup immediately.
Notes and tips
- If you don't have a Vitamix, you can use a Blendtec as an alternative.
- It's okay to use dried basil/oregano if you don't have fresh herbs.
- Feel free to add some leafy green vegetables i.e spinach, kale, callaloo etc.. if you want to.
- Any leftovers can be frozen in an air tight container for up to 3 months.
- You can make make a single batch of this recipe by halving the the amount.
- **VERY IMPORTANT** Please make sure you serve this soup immediately because this is a RAW tomato soup recipe. It tastes best when served straight away however it can be refrigerated for up 2 days.
- You may want to use my Homemade Vegetable Stock for this recipe.
- If you don't own a blender that has the ability to create heated friction, it's okay to puree the soup in a regular blender and transfer the contents to a saucepan to heat through.
- The best tomatoes to use for this recipe are Roma or Plum tomatoes.
- Use tomatoes that are fresh not canned.

Vitamix Tomato Soup
Ingredients
- 6 medium sized fresh tomatoes roma, plum etc...
- 1 large carrot
- 1 cup vegetable stock (236 ml)
- 1 celery stalk
- ⅓ cup cashew nuts optional (43g)
- 1 tablespoon tomato paste optional (15g)
- ½ tablespoon basil (8g)
- 1 teaspoon oregano (5g)
- 1 tablespoon onion powder (15g)
- 1 tbsp garlic granules/powder (15g)
- pink salt and black pepper to taste
Instructions
- Place all of the ingredients in the Vitamix container and secure the lid

Our Vitamix arrived yesterday. Our garden is overflowing with tomatoes and basil, so I searched for tomato soup, and found this. I cannot believe how fast, how hot, and how good it was! (We only had chicken broth, no carrots, and no celery, but still very, very good!)

Just made my 1st vitamix soup. OMg, the very best tomato soup, even much better than campbell's. So rich and creamy, just delicious. No going back to canned ans ssso healthy. Love it!!! My tomato soup forever!! Great recipe.

I made this tonight and for some reason it didnt taste right. The only substitute i did was chicken stock vs vegetable stock. You think that was it? I also used the soup function on the vitamix which was 5:45 mins.

We loved the soup. We used frozen tomatoes 🍅 from the garden and substituted pinenuts for the cashews. Also I didn’t have any tomato paste. We had quite a bit left over. Why do you say not to refrigerate overnight?

Hi Valerie, I'm glad you enjoyed the soup. The soup tastes best when served immediately however you can refrigerate for up to 2 days with no negetive impact. I have updated the recipe card to reflect this.

If the recipe post serves 2, then you would need to multiply each ingredient 12 times so give you a serving of 24 people. I hope that helps!

Why can’t canned (drained) whole tomatoes be used?

Hi Phyliis, the only reason why I don't recommend canned tomatoes is because they have been heat processed so wouldn't fit the raw criteria.
