For those of you who have been following the blog for some time now will already be familar with my homemade Cock Soup Mix.
Soup mixes play a crucial role in Jamaican soup, for instance Jamaican Chicken Soup, Jamaican Beef Soup , or even Jamaican Pumpkin Soup.
What it does is it thickens the soup and also enhances the flavour as well as giving the soup a subtle hint of colour.
I'm a huge fan of incorporating some soup mix into my Saturday soup. Without it, it just wouldn't be the same.
However what I don't like is the inclusion of MSG and those unnecessary filler ingredients which are not usually good for us.
This is the actual soup mix you will need to make my Jamaican Fish Tea Soup.

Not to mention some of those ingredients include gluten and as a food blogger who caters to a gluten free audience it is my duty to provide an alternative solution.
I want you to enjoy your favourite Caribbean dishes without feeling a sense of exclusion which is why I customised this fish tea soup mix, it has everything you need to enhance the taste of fish tea.
You don't have to worry about any fillers, bulking agents, gluten or even MSG.
Ingredients you will need

- Brown rice flour - You can use any other neutral tasting gluten free flour i.e amaranth/sorghum/cassava flour (NOT starch).
- Tapioca starch - Just a small amount of starch is needed to thicken the soup mix.
- Dried fish powder - Dried fish is used in a lot of African dishes, I typically use dried fish powder from a brand named African Delights
- Carrot powder - You can dehydrate and make your own, if you own a dehydrator. If not, you can purchase this from a health food store or on Amazon.
- Dried carrots - I buy these online, you can also use a coffee grinder to mill them to make carrot powder.
- Turmeric/Paprika - Both of these spices are used mainly for mild flavouring but most importantly to add some colour.
- Thyme/parsley/onion/garlic/celery seed/black pepper/pink salt - All of these herbs and spices are used in their dried form.
The steps

- Place all of the ingredients (excluding the noodles, if you are using) into a spice or coffee grinder.
- Mill into a smooth powdery consistency.
- Store in a glass jar (add the noodles now) and use accordingly.
Notes and tips
- This mix makes a total of one cups worth.
- The shelf life for this mix should be up to a year.
- Dried fish powder is a key ingredient in the mix, you can purchase this from markets/supermarkets in a neighbourhood with a large population of African/Caribbean and/or Asians.
- Alternatively, you can order dried fish (make sure it is for human consumption and NOT fish feed) or carrot powder on Amazon.
- Make sure to store in a cool dark area, avoiding sunlight.
- Label the jar so you can keep a watchful eye on the shelflife of the mix.
