Hi, I'm currently trying your recipe and encountering problems. 6 minutes was too much on my air fryer. It tasted burnt. I tried another batch and started at 3 mins, increasing at 1 min increments up to 5 mins. It's still not firm enough after 5 mins. My air fryer is a Nuwave and the temperature is in five degree increments (I used 355F). The wattage is adjustable and I left it at 1800W (which is the highest : other options 900 & 1500) Any suggestions on what to do?

Hi Renuka, sorry to hear that, let's see if we can troubleshoot. The dates need to be semi solid not completely solid as they should get completely firm when they cool down. Are you slicing them very thin and as even as possible so they air fry in unison? If not the date slices will air fry at various times.
What I suggest you do, is to air fry at 3-4 minutes (355F at a 1500w) instead (only use a small amount not an entire batch to start with), test them by squeezing them with your fingers, they should be slight firm, if they are slightly firm this should be your sweet spot. Just leave them to cool down (give it around 20 minutes using the freezer method. This will help them to become firmer much faster but NOT freeze them) after 20 minutes, check them again. They should be completely solid, you don't want to reach a solid state in the air fryer because that's when you get a nasty burnt taste.
If they're not solid after 20 minutes, pop them back in the air fryer for 30 seconds to 1 minute, squeeze them and wait for them to cool down (freezer method). I hope that helps! This is a fiddley recipe with precision. I'm comtemplating doing a video of this recipe so you guys can see how I do it.

So excited to try this! Wondering why it needs to be a coffee grinder vs a food processor? Also, have you ever tried making a powdered sugar using date sugar? Thanks so much for the recipe!

Hi Nat. You could try using a food processor instead but my own food processor isn't as powderful enough to grind the dates into a powdery consistency which is why I recommend using a coffee grinder. I use it for making my spice blends and it has never failed me consistency wise. To answer your other question, no I haven't tried making powdered date sugar but that's a great idea and one I will be testing out very soon.
