Plantain Fries

Learn how to make some homemade fries using fresh green plantain. A healthier alternative to fast food fries, cut into a crinkle shape, coated and air fried with my very own homemade curry sauce.

Whenever I have an urge for fries, I usually head to my local Caribbean market and stock up on some green plantain.

Who knew that green plantain could make some awesome fries? Move over McDonalds and brings that fast food experience directly to your home.

Unlike what is sold in these fat food establishments my rendition is fried using my air fryer, therefore, no deep fat frying is involved in the cooking process.

The plantain is cut using my crinkle cutter which gives the fries a more edgy look to them, if you have one I recommend using it however this is optional.

Then they are parboiled with some dry seasoning - curry powder along with some spices which help to enhance the colour and the taste of the fries and tossed in my homemade curry sauce before being air fried..

The curry sauce is what makes the recipe a game changer in terms of taste, don't skip it, in fact it is crucial to the recipe so make a batch ahead of time.

These crispy fries are the perfect Caribbean inspired snack or side dish.

Ingredients you will need

Ingredient you need for plantain fries

  • Green plantain - You will need plantain that is green NOT yellow. Green plantain is savoury in taste with a thicker outer skin.
  • Curry powder  - I'm using my homemade curry powder, this gives the fries a yellow hue during the parboiling stage.
  • Onion/garlic granules/paprika/pink salt - This is used to enhance the taste of the fries.
  • Curry sauce - I use my homemade version and this is needed to coat the fries.
  • Olive oil - For air frying. 

The steps

step1-4 peeling the green plantain

  • Cut off both ends of the plantain.
  • Score the plantain lengthways (deep enough to go through the skin only).
  • Use your thumb to peel away the skin and discard.
  • Slice the plantain in half then use the crinkle cutter (if you are using it) to slice the plantain into fries (¼ inches in thickness).

  • Fill a medium sized saucepan with water and bring to the boil.
  • Add the curry powder, onion granules, garlic granules, paprika and pink salt.
  • Parboil for 3-4 minutes, just until the fries are almost transulcent but not extremely soft (this is very important) .

  • Once done, immediately drain off the fries in a colander and gently rinse with cold water (this will prevent them from cooking any further).
  • Place the fries in a zip lock bag or a bag with secure handles.
  • Add ⅓ cup of the curry sauce.

  • Secure the bag by zipping or tying it.
  • Shake the bag to completely coat the fries.
  • Inspect the fries, they should be completely coated, if not, add more sauce, so you should be using ½ cup instead, secure the bag and shake again if needed.

  • Line the air fryer basket (this is optional).
  • Air fry at 180C/356F for 20 minutes or until they are golden and crispy.

  • Half way through the cooking time, shake the basket and spray the fries with olive oil spray.
  • Season with pink salt and serve accordingly.

Notes and tips

  • You can purchase green plantain from most market/super markets in neighbourhoods with a Latino/Caribbean and/or African population.
  • This is the recipe link that you will need for my homemade Curry Sauce and the Curry Powder.
  • Make sure to make the curry sauce ahead of time, ready to coat the fries with.
  • Do not overcook the fries when you are parboiling them or they will be too soft to work with.
  • They fries should be almost transcluent when parboiled, keep a watchful on them during this step, it is very important!
  • Keep in mind that the cooking time is a general guideline, it may vary depending on the brand of your air fryer.
  • For best results, make sure to serve the fries immediately.
  • Do not freeze the fries just serve them once they are cooked.
