Learn how to make these delicious, nutritious crispy air fried sweet potato cubes. Lightly seasoned chopped sweet potato that is so easy to make and are the perfect side dish for abundance of recipes.
I really love sweet potatoes, whether they are the Caribbean sweet potatoes with the red skin and white flesh or the regular sweet potatoes with orange flesh.
In my humble opinion sweet potatoes compliment almost any dish, they are the perfect side dish to breakfast, lunch or dinner, especially during the holiday season.
Just like my other holiday side dishes like my Sweet Potato Cornbread and my Green Bean Casserole With Coconut Milk
In my house we enjoy roasting, steaming, mashing and also air frying them. Our new favourite way to have roasted vegetables is to now air fry them.
The reason being is that the air fryer does just as much as the oven does these days. That's not to say that the oven will become obsolete because I believe there is still a place for the oven.
It's more so that the air fryer is trending right now so a lot of people are looking at ways to cook things in this funky little gadget.
This sweet potato recipe is very basic, but at the same time, make no mistake because it is tasty.
It's on parity to roast potatoes only we are using the air fryer instead.
What you will need to do is wash and peel the sweet potatoes. You can keep the skin on if you wish, but I typically peel away the skin first and foremost.
The next thing I do is chop the sweet potato into small cubes, nothing too fancy and put them in a medium sized bowl.
From there, I transfer everything into a large saucepan to parboil the sweet potatoes for a few minutes.
In my humble opinion, this is an important step to remove the starch and make the exterior more crispy.
With that being said, generally speaking, the smaller the pieces the quicker and crisper the sweet potato will be and larger pieces won't crisp as much and will take longer to air fry.
When it comes to seasoning the sweet potato, I prefer to use the bag method. What I do is place the potatoes in a bag with the olive oil and shake.
Then sprinkle in the herbs and spices separately and shake once more time.
Shaking is crucial to help the seasoning adhere to the potato which makes it much more flavoursome.
When you are shaking/coating the sweet potato using the bag method etc...it's best to have the air fryer basket preheated.
Just add the sweet potato cubes to the basket, in a single layer and air fry until they are slightly golden. It's that simple!
The steps
- Parboil the chopped sweet potatoes in a medium sized saucepan for 4 minutes.
- Drain off the water in a colander and rinse with cold water to prevent further cooking.
- Use kitchen towel to thoroughly blot the sweet potato dry.
- Preheat the air fryer.
- Place the sweet potato into a large zip lock bag or one with tie handles.
- Drizzle the olive oil over the sweet potatoes then seal and shake.
- Combine the smoked paprika, onion granules, garlic granules, thyme, parsley and coarse cornmeal in a small bowl.
- Sprinkle the herbs and spices all over the sweet potato, then seal and shake the bag again to coat completely.
- Place the sweet potato cubes in the air fryer basket in a single layer, do not over crowd (you may need to cook in batches).
- Air fry at 200C/400F for 8-12 minutes (shaking the basket occasionally) or until tender/the edges are lightly golden and crispy.
- Repeat the above steps with the rest of the sweet potato.
- Season with black pepper and pink salt to taste.
Notes and tips
- Feel free to prep ahead of time by peeling and chopping the sweet potatoes in advance, you can even season them and store in a zip lock/tie handle bag and refrigerate 1-2 days in advance.
- If you need to re-heat the sweet potatoes, you can do this in the air fryer or wrap them up and heat in the oven or microwave for a few minutes (add a splash of oil to re-crisp them).
- Any leftovers can be stored in an airtight container and refrigerated for up to 3 days.
- If you decide to keep the skin on, be sure to thoroughly wash/scrub the sweet potatoes. The skin is great to optimise fibre and vitamin c levels.
- When arranging the sweet potato in the basket, try not to overlap them as they will be soggy/mushy.
- Less is more, don't drown the sweet potato in oil, you yield a crispier texture by using a minimal amount of oil.

Ingredients

- 2 tablespoon olive oil (28g)
